Olive Oil Poached Corvina Fillet is poached in canola and olive oil blend. Calamari is sautéed with chorizo, garlic, shallots, olive capers, tomatoes and golden raisins. Served with a kalamata olive caramel and garnished with preserved lemon
Striped Bass Fillet is pan seared in an olive oil blend. Dates are sautéed with garlic, shallot and olive then tossed with couscous. Chorizo broth is garnished with preserved lemon and toasted pistachio
