Award-winning Bilson's is a fine dining restaurant created by one of the city's most celebrated chefs, Tony Bilson. The restaurant has recently been awarded three-hats. This makes Bilson's one of only eight establishments among Sydney restaurants to achieve three-hats, and the only three-hat restaurant in a Sydney five-star hotel. Located on the ground floor overlooking bustling Pitt Street and framed by tall arched Georgian windows, Bilson's emphasizes French cooking techniques and tastes. A private dining room is available.
