Isabel Flores de Oliva was born in April 1586. She was canonized by Pope Clement X in 1671, proclaiming her the "Principal Patron of the New World." Each August 30, the people of Lima gather downtown to celebrate Santa Rosa, or Saint Rose, which is Lima's patron saint. The processions depart from the Santuario de Santa Rosa de Lima, a small church at Avenidas Tacna at Callao in downtown Lima, and are followed by parties and feasts.

The revered image of Christ was painted centuries ago by an Angolan slave, and it is believed to protect against earthquakes.

For one day each February, Peru recognizes and celebrates its national cocktail, and nowhere are the festivities more raucous than in Lima. The cocktail is made with Pisco, lime juice, egg whites and a touch of Angostura bitters.
